Establishment Place of Facility:
Facility was established on totally 24.000 square meter land, including 6500 square meter closed area, in Yahyali District, Kayseri Province. Considering closed area, 500 square meters is designed as administration building, 4000 square meter as fruit treatment center and 2000 square meter as cold storage house. The building and its infrastructure are constructed considering possible production types and capacity increases within next three-year period.
Establishment purpose of the Facility:
This facility was established for producing and importing Concentrated Apple Juice by treating Apple, which is commonly grown in the region. Treated apple is non-standard apple which is by product of edible apple that amount of treated apple may vary between 15-30 % of total edible apple. In the facility, Sour Cherry is also being treated, which had gained a recent significant share in importation of concentrated fruit. Moreover, there are plantation fields convenient for sour cherry fruit within the region that adequate plantation of Sour Cherry fruit within next several years will provide very significant strategic advantage.
Environmental Impact Assessment:
With regards the environmental impacts, this facility is included in “Fruit & Vegetable Treatment Sector” that wastes arising from facility are as follows;
a- Liquid Wastes: After waste water is treated in accordance with irrigation water criteria in waste water treatment facility, it may be used as irrigation water.
b- Gaseous Wastes: LNG boiler used for vapor production in the facility has a state-of-the-art burning control system that burning is constantly kept under control by stack gas analyzer system and thus, both heat economy is maximized and stack gas emission is kept within legal limits in terms of stack gas emission.
c- Solid Wastes: Solid wastes arising from this facility is composed of fruit meal and consequently, solid wastes can be used as animal feed. Stone fruit pulp (Sour Cherry) is given as fuel to regional producers.
Effect of Facility of Regional Economy:
Operating as agriculture-based industrial organization, this facility will have important contributions to development of fruit growing, which plays primary role in regional economy, and to assurance of region’s future. When it is considered that edible fruit production may yield out-of-standard product (having no economic value for fresh consumption) ranging between 20 and 30 percent of total production depending on climate conditions and that economic value of aforementioned rate is taken into consideration for fruit producer, value of out-of-standard product fo0r fruit producers can be understood. According to Year-2007 data of Provincial Directorate of Ministry of Agriculture, amount of Fruit grown only in Yahyali District is 70.000 tons, among which 68.000 tons correspond to Apple production. Again, in Yesilhisar District, which is in closest proximity to Yahyali, amount of fruit production is 49.000 tons including 38.000 tons of Apples. Nigde Province and surroundings, which is almost in same distance with Yesilhisar District, have production capacity of 75.000 tons.
On the other hand, this facility had been source of hope for residents of the region due to resultant personnel employment; significant resources are provided to Transportation Sector both in terms of transporting produced goods to sea port for importation and transportation of grown fruits to the facility.
Fruits planned to be treated in the facility:
For first year, Apple and Sour Cherry is treated in the facility. Pomegranate and Strawberry can be treated in the facility using same equipments. As Apricot and Peach production required a technology different than clear fruit juice concentrates, it will be taken into investment program within following years. For this purpose, closed area of present facility is sufficiently designed. A place is assigned for tetrabrik packed production in the facility.
Production Technology of Facility:
Technologies to be used in this facility are as follows;
a- Pressing Technology: Products are pressed by BUCHER PRESS technology which is currently used all around the world as most recent pressing technology.
b- Enzymatic Mash Process: At production stage following fruit grinder, tube-in-tube heat exchanger is used for pre-pressing Mash Pasteurization and bringing product to enzyme temperature; thanks to this procedure, possible browning of mash is avoided by inactivation of oxidase enzymes and at this phase, Mash Enzyme required for increasing yield of pressing process is used.
c- Filtration Technology: Ultra-Filtration System is used for filtration, which is state-of-the-art technology used all around the world for filtration purposed. Moreover, perlite-vacuum plated filter system, where 30 % of total product will be passed through, is used for increasing color values of product and for decreasing patulin values.
d- Evaporation Technology: For Evaporation, pre-clarification aroma recovery and pre-evaporation as well as post-clarification evaporation with 3 effects system is used.
e- Filling Technology: Filling process is performed completely by full automatic barrel (drum) filling system.
Fruit Treatment and Concentrated Fruit Production Capacity of Facility:
a- Apple: In the facility, 12 tons of fruit per hour are treated by 2 Bucher HP 5000 press that the facility operates in 3 shifts.
Accordingly: 12 tons of apples/hour x 20 hours = 240 tons of apples/day
Total of Seasonal Business Days:
August-September ........................................: 20 days (corresponding to full capacity)
October-December ...........................................: 60 days ( ‘ ‘ ‘ )
January-February ............................................: 3 days ( ‘ ‘ ‘ )
Totally, 83 days x 240 tons/day = 19,920 tons of Apples/Year can be treated that Annually produced total Concentrated Apple Juice = 19,920 / 6,5 = 3.000 tons.
b- Sour Cherry: In this facility, 12 tons of Sour Cherry/h can be treated and facility operates in three shifts. Accordingly;
Within July, 12 tons/day x 20 hours = 240 tons of Sour Cherry can be treated. 53 tons of Sour Cherry juice concentrate can be obtained by 4,5 kg yield and 1.590 tons of Sour Cherry Concentrate/season can be produced by net 30-day working.
c- Pomegranate: In this facility, 15 tons of pomegranates/h can be treated and this facility operates in three shifts. Accordingly;
During October-November, 15 ton/h x 20 hours = 300 tons of pomegranates/day can be treated. 27 tons of pomegranates per day can be produced by 11kg yield and 810 tons of Pomegranate Juice Concentrate can be obtained if net 30-day working is ensured. However, due to overlap with production of Apple, it is recommended that pomegranate is put into cold storage house and later treated. Keeping pomegranate in cold storage house before treatment is of importance in terms of quality of concentrate.
d- Grape: In this facility, grape will be treated for production of grape molasses 4800 tons of grape will be treated in 30 days due to equation of 8 tons/h x 20 hours=160 tons / day and 1.060 tons of molasses/year can be produced by approximately 4,5 kg yield.
Auxiliary Facilities Technology:
f- Power Plant: A diesel Generator system which is activated within 10 seconds following power failure and two 630 KVA Transformation system are installed.
g- Heat Station: Fuel-oil No.6 is used in this facility that heating system includes main fuel tank with 50 ton capacity, fuel preparation system, burning yield controlling boiler and pressure boiler with 10 atu operation pressure, degasser and pumping systems.
